Homemade Snickers Bars

Hello holy homemade Snickers bars. These little puppies are amazing.  If you want to wow your spouse,  or just impress your friends, make these easy bars. They have a few steps but they go together quickly.  

I am not a huge Snickers fan, but these are just delicious. These are not calories friendly, you will not eat huge pieces, but you could.. I really could eat the whole pan.


Homemade Snickers Bars
Adapted From Imperial  Sugar
Ingredients
1 cup Semisweet Chocolate Chips
3 Tablespoons  Creamy Peanut Butter
7 Ounces Marshmallow Fluff
1/4 cup Creamy Peanut Butter
1 1/2 cups Powdered Sugar
1 cup Dry Roasted Peanuts
11 Ounces Caramels
1/4 Cup heavy Cream
1 cup Semisweet Chocolate Chips
3 Tablespoons Creamy Peanut Butter

Directions
Line a 11 x 7 baking Pan with Parchment paper.

Place 1 cup of chocolate Chips and 3 tablepoons of peanut butter in a heat proof bowl. Microwave for 60 seconds and stir until smooth. Microwave for Few more seconds if necessary.
Pour Mixture into prepared Pan and spread evenly. Place pan into the freezer For 2-3 minutes until hardened.
Meanwhile, in a mixing bowl with a paddle attachment, place marhmallow cream, 1/4 cup peanut butter and powdered suger and Mix until a soft ball forms. Remove dough and press on top of the chocolate layer.
Sprinkle peanuts on top. Gently press them in.
In a small saucepan, add the caramels and heavy cream. Cook over medium heat, stirring constantly until melted. Immediately pour over peanuts. Spreading evenly.
Refrigerate for 5 minutes until set.
In a Heatproof bowl, melt remaining chocolate chips and peanut butter. Pour over caramel layer. Spread out evenly.
Place pan in the fridge for 10 minutes until chocolate is set.
Cut with a sharp Knife.

Chocolate Peanut Butter Gooey Bars

SO.... I am on this huge gooey bar kick. This particular bar is absolutely amazing. Oh my Heaven. If you are a chocolate peanut butter lover, these bars are for you. These bars will kick Reese's cups out of the way. Reese's are my husbands favorite. I always try to save some from Halloween. Sweeten his heart... He really knows that I love him very much.

As we all know, I like easy and delicious. These bars have a few steps, but nothing is complicated and they just layer and go together quickly. I took these to a party and they were devoured. I cut them into small pieces and that was perfect. There was also the thought as making these for a birthday dessert. If you are not a cake lover and like peanut butter and chocolate, holy moses, these are a HIT.

Chocolate Peanut Butter Gooey Bars
Ingredients
1 Chocolate Cake mix
1/2 cup (1 stick) butter, melted
1 egg

1 cup chocolate chips
1 cup peanut butter chips

1 (8 ounce) package cream cheese, softened
1 cup peanut butter
3 eggs
1 teaspoon vanilla extract
1/2 cup (1 stick) butter, melted
4 cups powdered sugar

1/2 cup chocolate chips
1 tablespoon peanut butter

Directions
Preheat oven to 350 degrees. Line a 9x13 pan with aluminum foil, and spray the cooking spray. 

In a mixer with a paddle attachment. Combine the cake mix, egg and butter together. Beat until combined. Pat down the cake mix batter into your pan. It will take some patience and a few minutes to cover the entire surface of your pan.

Pour the chocolate chips over the bottom layer. Pour the peanut butter chips over the chocolate chips and cover completely.

In the same bowl, combine the cream cheese, vanilla extract, and peanut butter until totally mix together. Add the eggs one at a time. Mixing after each egg. Add the melted butter and mix completely. Add the powdered sugar and mix thoroughly. Pour this mixture of the chip layer.

Bake for about 45-50 minutes. The mixture will be puffed up in the center when done. It will only jiggle slightly. Remove from the oven and let cool.

Melt the chocolate chips in the microwave on 50% power for a minute. Add the peanut butter. (MAYBE another 15-30 seconds if not totally melted). Stir stir stir. Spread the mixture over the top of the cream cheese layer. (Mine was still warm and made the frosting melt more) Perfect. 

Once totally cooled or slightly chilled, cut into pieces and serve.


I believe everyone knows by now.

Heavenly Brownies

Healthy ~~ Absolutely NOT
Delicious ~~ Absolutely YES

If people think brownies are just some same old dessert, these brownies will knock them out of the ball park. Oh my goodness. Can brownies be sent from Heaven. I believe so. AND these are a snap to make. 

DISCLAIMER: 
You will not lose weight eating these brownies
You may get a sugar buzz eating these brownies
And though there are several food groups involved in these brownies, they do not fit any meal plan

What you will find though, these sinfully delicious brownies may make your spouse love you more, your friends will want to hang out with you more and they will plain and simple, bring a smile to your face as you eat them. I like a lot of different sweets, but these are just really good. These are a current favorite. 


Heavenly Brownies

These nuggets of love contain a brownie on the bottom, marshmallow middle and a cocoa krispies, chocolate, peanut butter topping. WOW... a combo platter to make anyone smile. This recipe makes an 8 x 8 pan, for a regular family or friends, this is good. If you were making them for a tray or large group, please double the recipe and use a 9 x 13 pan.

Heavenly Brownies

Ingredients
1/2 cup (1 stick) butter
2 ounces unsweetened chocolate
1/2 cup cocoa powder
1 1/4 cup granulated sugar
1 teaspoon vanilla extract
2 eggs
3/4 cup all purpose flour
1 1/2 cup chocolate chips (divided - 1/2 cup & 1 cup)
20 large marshmallows
1/2 cup peanut butter
3/4 cup cocoa krispies

Directions
Preheat oven to 350 F. Line an 8 x 8 pan with tin foil and spray with cooking spray.
In a large bowl, add the butter and the unsweetened chocolate. Place in microwave for 1-2 minutes until melted. Check and stir after 1 minute. Remove from microwave, stir in sugar. Mix in the eggs one at a time. Add vanilla and flour and mix together. Batter will be thick, stir in 1/2 cup of chocolate chips.

Spread batter into pan and bake for 22 minutes. The brownies will not be completely done, but remove from the oven and place the marshmallows on top. Return back to the oven and bake for another 6 minutes. The marshmallows will be soft and smashable. Spread the marshmallows over the brownies.

As your brownies start to cool, using the same bowl, gently melt the remaining 1 cup of chocolate chips and peanut butter in the microwave for 30 seconds to 1 minute. Stir together until melted, add cocoa krispies and spread over the brownies. Let the chocolate layer harden before cutting.

Mix together and melt in the microwave. Then add the cocoa krispies

Apple Peanut Butter Smoothie

If you are thinking, yesterdays smoothie was "THE Best," why is she making something different. Because everyone, I want to be outside the box. Today's smoothie does not have a banana in it. I have made very few smoothies with Peanut Butter, so ... here we go. 

This smoothie is considered a Protein drink, but there is no Protein powder in it. I like that. GO natural. Do your body good. This is an on the go smoothie. Light, but still filling. Great for a mid morning or mid afternoon snack. I really like this drink. This is stuff you would have on hand.

Apple Peanut Butter Smoothie

Ingredients
1 cup Almond Milk
8 oz (2 cup packages) unsweetened applesauce
1/3 cup of Oatmeal
1 tablespoon Peanut Butter
1/4 teaspoon of Cinnamon
ice

Directions
Combine all ingredients in the blender in this order, Blend until smooth.

Add ice to reach your desired thickness. Drink up and enjoy

Oatmeal Raisin Smoothie

If you are wondering, my Sweets business is a bit slow in January. WHY do people want to lose weight and not eat cookies and cakes.... Hmmm, wait.... that is me. ECK... I know, I know.... I do have a cupcake job for tonight. NOT complaining. So smoothie nation is still going strong. I bought all the ingredients for the Green Cleanse Smoothie, just have not tackled it yet. Instead, I made a cookie. Well not exactly. I love Cookies and everyone know that, but I am trying to not add to my winter weight. So I made this smoothie with Oatmeal and Raisins in it. WOW, it was so good and filling. I was not hungry for hours. Between the heartiness of the Oatmeal and the delicious sweetness of the raisins, I was satisfied. This is a hundred times better than a Special K Protein shake. Also no bottle to throw away.

Oatmeal Raisin Smoothie

Ingredients
1 1/2 cup almond milk
1 frozen banana
1 tablespoon of peanut butter
1/3 cup of oatmeal
1/4 cup of raisins
1/2 teaspoon cinnamon
1 scoop of vanilla protein powder

Directions
Place all ingredients in a blender in order and blend until smooth.


This smoothie is loaded with GOODNESS. 
So much better than an over processed, over priced Shake

I packaged these up in to-go glasses, and had them they next day.
Excellent, took care of my afternoon craving.

Chocolate Fluffernutter Bars

These bars are AMAZING.... I was scouring new recipes for something different. Like I do not have a zillion recipes. I have made them twice. Everyone just devoured them. They are moist, taste sinfully delicious and are quick to throw together. If you are a new baker and want something easy and guaranteed to impress, these are it.

Just to confuse you a bit, 
I divided my pan in half, and used two different chips. 
Both were Winners.
The second time I made these bars, I used Reese Chips and Peanuts.
Everyone liked them this way also. Be my guest and venture out, you may 
create another new flavor I have not thought about.

Chocolate Fluffernutter Bars

Ingredients
1 box Yellow cake mix
1 large egg
1/2 cup (1 stick) butter, softened
1/2 cup creamy peanut butter
1/2 cup marshmallow creme
14 oz (whole can) sweetened condensed milk
12 oz bag of either semi sweet chocolate chips or white chocolate chips
1 cup chopped peanuts (optional)

Directions
Preheat oven to 350 degrees and line a 9x13 baking pan with aluminum foil. Spray foil with cooking spray.

Place cake, egg and butter in a large bowl. Mix until well incorporated.
NOTE: The first time I made this, I did it by hand. WOW - what a lot of work. 
The second time I made this recipe, I did it in my stand mixer. WOW - NOT a lot of work. 
Press dough into prepared baking pan.

Place peanut butter, marshmallow cream, and condensed milk into a large bowl and mix until combined.
NOTE: I used the same bowl as the bottom dough. Ensured everything was out of pan. 
Pour over the crust and then top with chips and optional peanuts. Bake for 23-25 minutes. Edges will just start to seem brown.

Let cool completely and remove from pan and cut. They have a nice shelf life because they are so moist, but really they will be devoured and gone.

No Bake Chocolate-Coconut Bars

As I am sitting here with a thousand ideas in my head and nothing on the laptop.There was a commercial that stated that Julia Child did not publish her first book until she was 51. I just celebrated a birthday last week. I am not in my 50's, but they are rapidly approaching. Holding onto my forties with so much force. This is also why I am working on launching my sweets business. I have made several treats for a few different events. It is starting out slowly. As this blog progresses, I hope my life will continue to change.

Our trip to FLA was wonderful. My Mom is doing great. She looks fabulous. We walked on the beach everyday. It is always so much work to get to Florida, but I am always glad we went. My sisters and I  are so lucky there are so many great people in Florida.


My Husband and I were also fortunate enough to see my Florida sister twice. It was a blast hanging out with her. My Sister made this fabulous Strawberry Cake for me pictured above. Someday, I will post the recipe. She also made a lovely Meyer Lemon Cheesecake on my birthday. WE ate and drank way to much on vacation. I actually sleep all night. 8 hours of sleep is quite an accomplishment for me.

So, we are back home trying to go back to regular food. Desserts were still screaming for me. I have always loved No Bakes. They are always such a wonderful little treat. When we were younger, my sisters and I used to make them and eat them out of the pan on the stove. Burned our tongues every time.


These bars are fabulous. I could really eat the whole pan. Little refrigerated snacks. They are also healthy, yes healthy. Coconut oil is so good for you. Peanut Butter, Oatmeal, Dark Chocolate, and Nuts, all good things. Talk about protein and fiber. This recipe can be modified a ton of different ways. Whatever floats your boat, or whatever you have in the pantry.  Most of all, these are bars are easy to whip up. Great for any short notice get together.



No Bake Chocolate Coconut Bars

Ingredients

1 cup peanut butter
1/2 cup honey
1/2 cup coconut oil
2 cups old fashioned oatmeal
1 cup shredded coconut
1/2 cup chopped pecans
1 1/4 cup dark chocolate chips
1/4 cup flax seed meal

Directions
Line a 8x8, 9x9, or 10x10 pan with parchment paper. This will vary the thickness. Set aside.

Melt the peanut butter, honey and coconut oil in a medium size saucepan over medium low heat. Stir until mixture melts. When melted, add chocolate chips and continue to stir. About a minute or so.

Remove pan from heat and stir in remaining ingredients until combined.

Pour mixture into your pan. Refrigerate for 3-4 hours, until set up. Cut into pieces and pig out!

Pour into the pan. I used a 10 x 10 pan. A smaller pan would make thicker bars
